Cherry Cheesecake Recipe by Betty Crocker 4 Cream Cheese
Company Cheesecake with it's rich cherry or strawberry glaze is awesome. Cheesecake is one of our favorite desserts. I have several that I like a lot. I especially love eating rich chocolatey cheesecakes when we go out to eat.
But when I want to go back to basics and just have a classic New York style cheesecake with a strawberry glaze then this is the recipe I go to. I double the standard Betty Crocker recipe and use a 10-inch springform pan. I only use one batch of the strawberry glaze (that's plenty), although I made a double batch this time since I had so many strawberries.
This classic cheesecake recipe is outstanding and makes a wonderful contribution to your cheesecake collection. A delicious cream cheese filling is topped with a strawberry glaze or a cherry glaze–your preference. I prefer it with the strawberry glaze. The spectacular presentation is certain to wow your guests.
Thankfully, my two boys didn't inherit my sweet tooth gene. They can usually take or leave desserts – which means they usually leave them. Cheesecake on occasion is about the only thing they allow themselves to have.
This recipe is sure to please the whole family. I had forgotten about this recipe in the Betty Crocker cookbook until having it last year at a party. Oh, my, this is a heavenly dessert!
So, allow yourself to splurge and pamper yourself with this great recipe sometime — for special occasions, or NOT! I guarantee you'll start drooling as you view these photos.

Company Cheesecake with Strawberry Glaze is absolutely superb!
This cheesecake is a great recipe to have for guests — just like the name implies! Company Cheesecake is so rich and delectable. You will LOVE this dessert!
Here's what I did.
Measure bread crumbs into a mixing bowl. Add sugar.
Add butter.
Stir to combine.
Spray a 10″ springform pan with Baker's Joy cooking spray since it has the flour in the spray. Press graham cracker mixture into the bottom and up the sides of the springform pan.
Bake at 350 for 10 minutes. Remove from oven.
Meanwhile, make cream cheese layer:Soften cream cheese.
Blend cream cheese with electric mixer.
Add sugar an d grated lemon peel. If I had the time I would have grated my own but I was trying to get this done quickly so settled for the stuff from the spice rack. Add vanilla an d eggs.
Blend with a mixer until smooth.
Add cream cheese layer.
Bake at 300 degrees for about 1 1/2 to 1 3/4 hours. Allow cheesecake to cool completely. This will take a couple of hours. The middle of the cheesecake will sink into the cake.
Once cheesecake has cooled. Spread with sour cream and refrigerate a couple of hours.
Meanwhile, make Strawberry Glaze:Wash, hull and slice strawberries.
Mash strawberries with a potato masher.
In a saucepan add sugar an d cornstarch. Stir well to combine and remove any remaining lumps.
Add water.
Add strawberries. Stir to combine. Cook until thick.
You can see how thick the Strawberry Glaze is now.
Once cheesecake is cooled add Strawberry Glaze. Refrigerate again until ready to serve. Company Cheesecake is a great dessert for Valentine's Day, the holidays, or any special occasion birthday or anniversary.
Company Cheesecake is a sumptuous special occasion dessert. This makes a huge cheesecake – probably close to 16-20 servings.

CHEESECAKE:

Stir together graham cracker crumbs and 4 tbsp. sugar.

Reduce oven temperature to 300°.

Beat cream cheese in large mixer bowl.

Gradually add sugar, beating until fluffy.

Add lemon peel and vanilla.

Beat in eggs, one at a time.

Bake 1 hour and 15 minutes until center is firm.

Cool to room temperature.

Spread with sour cream and Strawberry Glaze.
STRAWBERRY GLAZE:

Mash enough fresh strawberries to measure 1 cup.

Blend 1 cup sugar and 3 tbsp. cornstarch in small saucepan.

Stir in 1/3 cup water and the strawberries.

Cook, stirring constantly, until mixture thickens and boils.
CHERRY GLAZE:

Drain 1 can (1 lb.) pitted red tart cherries, reserving liquid.

Add enough water to cherry liquid to measure 1 cup.

Mix ½ cup sugar and 2 tbsp. cornstarch in small saucepan.

Stir in the 1 cup liquid.

Cook, stirring constantly, until mixture thickens and boils.

Remove from heat; stir in cherries and 4 drops red food coloring.

- 4 tbsp. sugar
- 6 tbsp. butter, melted
- 5 8-oz. pkgs. cream cheese, softened
- 2 cups sugar
- 2 tsp. grated lemon peel
- ½ tsp. vanilla
- 6 eggs
- 2 cups sour cream[br]
- [b]STRAWBERRY GLAZE:[/b]
- 1-2 cups strawberries
- 1 cup sugar
- 3 tbsp. cornstarch
- 1/3 cup water [br]
- [b]CHERRY GLAZE:[/b][br]
- 16-oz. can pitted red tart cherries, reserve liquid
- 1/2 cup sugar
- 2 tbsp. cornstarch
- enough water added to reserved cherry liquid to measure 1 cup total liquid
- 4 drops red food coloring
